Mexican Style Corn on the Cob

I've always wanted to try Mexican style corn on the cob for the longest time. After seeing so many delicious pictures floating around the internet, I just had to make it myself! Unfortunately I didn't have Cotija cheese and I was too lazy to buy some, so I just used mozzarella cheese (the only cheese I had on hand). The corn was grilled to perfection and tasted absolutely delicious with all the toppings! Try it yourself!!

Ingredients:
  • 8 ears corn with husk
  • 1/2 cup salted butter, room temperature
  • 1/4 cup mayonnaise 
  • 1/2 cup mozzarella cheese
  • 2 tbsp paprika
  • 1/4 cup chopped cilantro leaves
Directions:
  1. On an outdoor grill, cook corn until lightly brown and charred for about 10 minutes. Place on plate when done.
  2. Spread the butter and mayonnaise all over the corn. Sprinkle the mozzarella cheese, paprika and cilantro all over. And you're ready to serve!



Make sure you pick out fresh and beautiful corn! The key to a delicious grilled corn is the freshness~





We ate the grilled corn as a side, along with the crushed potatoes (click for recipe) for our BBQ ribs dinner! So perfect!
