Ingredients:
- 5 large red skin potatoes, washed
- 2 tsp kosher salt
- 1/4 cup butter
- 2 tbsp chives, finely chopped
- 1/2 cup grated mozzarella cheese
- 1 tbsp cheddar cheese (optional)
Directions
- Preheat oven to 350 degrees F.
- Put potatoes in a large pot filled with water and bring to a boil over medium high heat. Boil until potatoes are tender for about 15-20 minutes and then drain.
- Place potatoes on a baking sheet. Using a potato masher, gently crush the potatoes until the potatoes split open halfway. Season the potatoes with the kosher salt. Spoon butter onto each potato, add mozzarella cheese and then sprinkle with chives.
- Bake in preheated oven until cheese has melted. Top with cheddar cheese for an added touch of colour (optional).
