Easy Waffle Recipe

I was flipping through the dessert section on Pinterest and I had a sudden craving for waffles after seeing so many pictures of it. Soon after, I immediately went into my kitchen and looked to see if I had all the ingredients to bake them from scratch. I had found all the ingredients except for eggs! (I later found out we actually had a carton of eggs in the fridge which I totally missed -_-) I decided to just go ahead and bake the waffles without the eggs and see how it turned out. To my surprise, the waffles came out nice and fluffy! Not to mention they were so delicious with my toppings. Give this recipe a try if you're craving some warm delicious waffles to comfort you during this cold winter! 

Serves: 4 people

Ingredients:
  • 1 cup flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 cup almond milk
  • 2 1/2 tbsp melted butter
  • 1 tbsp vegetable oil
  • 1 tbsp water
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate
  • 1 cup strawberries, sliced
  • icing sugar
Directions:
  1. In a medium mixing bowl, combine flour, baking powder, sugar and salt.
  2. Stir in almond milk, melted butter, vegetable oil, water and vanilla extract, until smooth.
  3. Brush the preheated waffle iron with melted butter or vegetable oil. Spoon batter into the hot waffle iron and cook until golden. Plate the waffles.
  4. Add water to a double boiler over low heat and add semi-sweet chocolate. Constantly stir chocolate until melted.
  5. Sift desired amount of icing sugar onto waffles, sprinkle sliced strawberries and drizzle melted chocolate all over the waffles. Serve!
